I love these.
My choices would be:
Warrior + Enchanter = Psionic - Using Runes/Haste/Slows and group resource replenishment - special utility could be summoning the EQ1 iconic floating sword/shield but have the shield count as an actual shield (allowing the player to dual wield or use a 2h while maintaining the chance to block) and the sword using the base attack skill minus the chance to riposte or double attack etc. Chance of spell failure while wearing armor heavier than light mail if needed for balance (would have to make runes or shielding type spells compensate).
Warrior + Wizard = Eldritch Knight (DnD tm) - Using Wizard's utility/defensive spells to include short distance portals to gap close, and maybe favoring a staff for PBAoE damage (picturing dualwileding a 1h sword and 1h staff or a 2h staff) "You shall not pass!" Could still wear plate while utilizing a 2h staff to focus their arcane powers, otherwise have to wear light mail or lighter... or whatever depending on balance.
Some other combos I wont get into detail about could be:
Rogue + Enchanter = Illusionist
Monk + Cleric = Disciple (Vanguard style)
Rogue + Monk = Assassin (Ninja)
Rogue + Warrior = Swashbuckler
Druid + Mage = Elementalist
Warrior + Warrior = Juggernaut, dual wielding shields.
